«تعادل طعم ترشی و شیرینی را در شمال و راحتی و آرامش موقع صرف غذا را در شیراز تجربه کردیم. گرما و صمیمت خوراکهای بینظیر در تبریز و ترکیب عجیب و فوقالعاده دوغ و گوشفیل را در اصفهان مزهمزه کردیم. کراهی و کلهپاچه ویژه را در چابهار و بهترین کباب دنیا را خوردیم و حالا اگر به من بگویند به ایران بیا، یک پرس کباب بناب بخور و دوباره برگرد، حاضرم هرجای دنیا که باشم برای خوردن یک وعده کباب ایرانی به این کشور سفر کنم.» مارک، کارآفرین تایلندی به همراه حمید سپیدنام معروف به مستر تیستر، دور ایران را گشتند و غذاهای ایرانی را با حضور گرم مردم بومی تجربه کردند. این گفتوگو، تجربه این سفر اعجابانگیز را وصف میکند.
- سلام به همه دوستان گلم. امیدوارم خوب باشید. امروز، روز آخری است که ما در خدمت مهمان عزیزی هستیم که در این چند وقت شاهد سفرها و گزارشهایش از غذاهای مختلف بودید و قرار است که یک interview با ایشان داشته باشیم و بتوانیم سوالاتی که در ذهن خیلیها بود و مدام از ما میپرسیدید، از ایشان سوال کنیم و انشاءالله شما هم به جوابهایتان برسید.
-Mark, I’m going to ask to some questions about your travel to Iran and Ali is going to translate it. Is that ok?

- درواقع در این سفر شاهد بودید که ما به رشت سفر کردیم، شهر بعدی تبریز بود، بعد شیراز بعد اصفهان و بعد هم چابهار و در تهران هم چند روزی بودیم -فکر میکنم فقط دو روز بودیم - سعی کردیم باز هم گزارشهای مختلف بگیریم.
- خیلی خوش آمدید و امیدواریم این سفر خوب بوده باشد. چه حسی دارید؟ در ابتدا کلیت سفر را توضیح دهید که چطور بود؟
-Mark, we are very dignified of your presence in Iran. Welcome to Iran. Just Let us know your opinion about the country, the people and the culture.
-from the moment we arrive to Iran, actually even from the moment we got an airplane from Bangkok. it was people just welcoming us people say welcome to Iran, we’re so happy that you’re visiting, meeting Ali, meeting Mr. Taster, meeting Hamid, Pegah,… at the airport then just the warmest welcome and throughout our trip. People just giving us gifts, People coming to say hi… People, amazing people, that’s what stands up the most and entire trip was filled with fun, amazing food, experiences beautiful places, beautiful people.
- بسیار خرسندم از اینکه این مطلب را توانستم به سمع و نظرتان برسانم. از همان لحظه اولی که وارد پرواز شدیم بسیار موردتوجه مردم قرار گرفتیم، همه با آغوش باز از ما پذیرایی کردید. موقعی که به فرودگاه آمدیم، با راهنمایمان روبهرو شدیم. بعد با آن وضعیتی که سراغ مستر تیستر آمدیم و ایشان را در حالت پیتزا خوردن دیدیم...
- داشتند پیتزا میخوردند...
- و بعد به همین صورت از فرودگاه خارج شدیم. باز هم مردم سر راه ما آمدند، همه جا با هدایای مختلف، شکلات و خیلی چیزهای دیگر سعی کردند به ما خوشامد بگویند و ما را خوشحال کنند که از این بابت بسیار خوشحال هستم.
- تجربه اول مارک به شهرستان رشت و ماسوله مربوط میشد. میخواهم بدانم که تجربه غذایی که آنجا داشت از کدام غذا بیشتر خوشش آمد؟ آنجا چه حسی داشت؟ چه چیزی بیشتر از همه نظرش را در این شهر جلب کرد چه بحث خود روستای ماسوله یا خود شهر یا غذاهایی که خورده است؟ میخواهم بدانم چه چیزی در این شهر از همه جذابتر بود؟
- Let’s preview the trips to different parts of the country. The first City we travelled was Rasht and then we got to the actually some small cities and the village of Masule and then we visited different restaurants and different places. Would you tell us what is your opinion about the food we tried in the north of the country, the history and the historical background, the architecture and the people of the North, please?
-especially the Rasht or …?
-No just Rasht and Masule.
- Rasht and Masule… ok. I think for me the north of Iran really stands out, because for me personally, it was ingredients and combinations of food that I’ve never tried anywhere else in the world. It was unique, so unique, especially the walnuts the pomegranate paste, like harmony and sour and sweet and the amazing Smokey eggplant … not just the combinations, I even like a lot of healthy ingredients which nurture the body. It was spectacular.
That was very interesting to me. People again were just extremely welcoming and so friendly. We met, not even a single day by meet at least 50 people welcoming us to Iran and being able to see the Caspian sea was also spectacular and the Caviar…
-oh caviar… I forgot it…
- Caviar... I just was once in a life’s experience. The freshest, and actually the best ever caviar in the world.
- اگر بخواهم راجعبه شمال کشور صحبت کنم میتوانم در کل بگویم بسیار عالی بود، نظرم را خیلی زیاد جلب کرد. راجعبه محتوای غذاها باید بگویم ترکیب بسیار شگفتانگیزی بود. از گردوها و رب انار... بهطورکل آن بالانس بین ترشی و شیرینیای که در آشپزیهای آن منطقه از کشور میتوانیم شاهد باشیم و همچنین استفاده از بادمجان و سایر مواد غذایی که هم مقوی بودند و هم درعینحال بسیار سالم و سلامت بودند. اگر بخواهم راجعبه مردمش در یک جمله صحبت کنم، فوقالعاده بودند، با روی بسیار باز و دوستانه. روزی نشد که ما چندین یا چند نفر را ملاقات نکنیم که آمده بودند به ما هدایا بدهند و خوشامد بگویند و تجربه بسیار منحصربهفردی را با مردم شمال کشور داشتیم. راجعبه دریای خزر هم میتوانم بگویم که به آنجا رفتیم و قدم زدیم و تجربه بسیار منحصربهفردی بود و خاویارش را هم که نگویم! میتواند بسیار عالی و زبانزد در تمام جهان محسوب شود.
- در مورد خود ماسوله چطور؟
-what about the architecture of part of village Masule?
- Masule is unique because it’s built on the side of the mountains and your yard is on top of the neighbor’s house below and so it creates a unique community, for you’re always connected with everybody within the village in Masule. It’s like a warm feeling, people are connected, people are… you know everybody around you and so that gives a uniqueness that it’s really about the people, which I really liked.
- شاید بهطور کلی بخواهم صحبت کنم چیزی که ذهن مرا به خودش مشغول کرد و میتوانستم فقط از آن صحبت کنم این مطلب باشد که به فرض حیات خانه شما، سقف همسایه بعدی است. به این ترتیب من در ارتباط مستقیم و بسیار نزدیک با همسایهام هستم و این ارتباط بسیار ارزشمند و حائز اهمیت است که برای من میتواند بسیار جذابیت باشد.
- و اما برویم سراغ تبریز و اینکه از خود تبریز شروع کنیم. چون یک اتفاق جالبی که افتاد و البته عدهای از دوستان تبریزی ما گلایه میکردند میگفتند چرا مارک فقط سیبزمینی را گذاشته؟ البته شاید خبر نداشتند که ما یک تور کاملی در بازار داشتیم که غذاهای مختلفی را مزه کردیم و... اول از تجربهاش برایمان بگوید و بعد راجعبه کارش بگوید. چرا آن ناحیه برایش جذاب بود، ولی ما اگر به یک رستوران لوکس میرفیتم شاید انقدر برایش جذاب نبود. چون برای تبریزیها بیشتر از همه سوال شده بود که چرا رفتید بازار یا از گاریها گزارش گرفتید؟ من فکر میکنم اگر نوع کارش را بتواند توضیح دهد شاید دوستان تبریزی هم جوابشان را بگیرند. ضمن اینکه ویدئوی کامل هم هنوز خارج نشده، چون اگر خارج میشد قطعا دوستان میدیدند ما کوفته تبریزی و جلز بلز را چشیدیم، چلوکباب «حاج علی» در بازار را هم همینطور. فکر میکنم در ابتدا یک توضیحی راجعبه تجربهاش بگوید و اینکه این ویدئوها را چطور انتخاب میکند و اصلا کلیت کارش را توضیح دهد که دوستان تبریزی هم قانع شوند.
-the second city in travel was Tabriz. In Tabriz mostly the people watch your video of the potato and the egg and the bread. I have no idea about that I’m going videos in the future. For us also it’s interesting to know why you have paid such a great in pay attention to the standup potato and egg and bread in the market but ‘No’ to a five star restaurant in the city. Because all of the Tabriz’s people just very interested to show the best ones in their city and they expected Mr. Taster to show the very high-class areas, or the city center over downtown. So of course they don’t know in the future you’re video would get some idea about for example Kofte, the Liver, the Heart and the Kidneys, also… iz Kabab in Bazar.
Could you tell us what is your strategy to produce your videos, for example you don’t take videos from five star restaurants but from simple restaurants in the city center. What is your strategy? Or actually, what is your philosophy in taking videos?
-For me in it back to the philosophy and to the fact that food… there is no food without people. People make food, people join together for food, people come together because of foods. And so, when something so simple like that is available and every street food-stall within Tabriz, everybody can eat it, everybody can enjoy it and people and friends from everywhere and economic level can hang out and eat. You can share it together. So that’s why something so simple like that is so significant, and so beautiful, and that’s why I love to eat things like that. And even us, we had two nights in a row, or two days in a row, the simple potato egg wrapped up in bread, with a little mint on it, and butter. And both times it was just us standing around. We met people. People came, playing music and that’s because of a simple food that everybody can come together and eat. But that being said, we ate a lot more in Tabriz as well.
- در مورد توضیحاتم راجعبه این سوال باید بگویم فلسفه و واقعیت را اگر در نظر بگیریم این مطلب بسیار حائز اهمیت است که مردم جمع میشوند تا غذا را درست کنند، مردم جمع میشوند تا غذا را میل کنند. این مردم میتوانند از طبقات و مشاغل مختلف باشند که در یک بازار، دور یک دکه سیبزمینیفروشی دور هم جمع میشوند و بدون هیچ محدودیتی از یک غذای مشترک استفاده میکنند و از آن لذت میبرند. اینها میتوانند از هر جای شهر باشند. بدون اینکه اصلا به جایگاه و کلاس اجتماعیشان توجهی داشته باشیم، میبینیم در کنار همدیگر لذت میبرند و از غذا میل میکنند. نمونه بارز، خودمان که در چند جای شهر، دور دکههای سیبزمینی جمع شدیم، گفتیم، خندیدیم و این ساندویچ که همان سیبزمینی و تخممرغ باشد، میل کردیم و کلی هم خوش گذشت. لذا قاعدتا میتوانم بگویم برنامه ویدئویی تبریز بسیار پربار است و در آینده وقتی آپلود میشود باید دید که جوانب مختلف غذایی شهر تبریز را در بر خواهد گرفت.
- ما به شیراز آمدیم. جایی که توانستیم غذاهای مختلفی را مزه کنیم. علیرغم اینکه زمان بسیار کمی داشتیم یعنی شب به شیراز رسیدیم یک روز را در آنجا بودیم و صبح روز بعد به سمت اصفهان حرکت کردیم. تقریبا میتوان گفت یک روز و نصفی در شیراز بودیم، ولی به اماکن مختلفی سر زدیم مثل تحت جمشید، مسجد نصیرالملک و جاهای تاریخی دیگر و همینطور غذاهای خوشمزهای مثل آشِ سبزی، گوجهپلو، کلمپلو و قنبرپلو و غذاهای دیگری که آنجا خوردیم. از خانه پرهامی دیدن کردیم و اتفاقات خوب دیگری که در شیراز افتاد. نظر شما راجعبه شیراز چه بود؟ از غذاها شروع کنیم که کدام غذاها بیشتر از همه مورد توجه شما قرار گرفت؟ بین آش و غذاهایی که در خانه پرهامی خوردید و تستهای دیگری که داشتید. به ما بگویید دقیقا در شیراز چه حسی داشتید؟
- Let’s review Shiraz. In Shiraz we got very lucky to visit some historic sites like the (some) mosques, the grand bazar, also bath-house of Shiraz, the main gate to the bazar. And in there, however we got the very short time to visit and to test different foods but we were very fortunate to have some very samples of Shirazi foods like Iranian vegetable noodle and tomato rice and also Ghanbarpolo and we visited "Parhami house" in Shiraz, and also we tried Shirazi ice cream that was Faloode or Paloodeh.
Could you tell us your opinion about the foods and the noodles and the desserts we tried in Shiraz?
-Shiraz has the Ash Sabzy and Halim. I think to me the food in Shiraz was like the ultimate comfort food. The Ash is something good to eat in the morning and feel so good in the morning than all of the different rice dishes like Kalam-polo, tomato-rice, ghanbar-polo. Those are like dishes that you can eat any day, every day, [they] always taste amazing and always like comforting. And the best kind of home cooking food that wouldn’t taste the same at a restaurant, but it would taste so good, amazing home cook. They are really like some of the most comforting food in Iran. On top of that, I think Shiraz also stands out as some of the friendliest, most laid-back people than anywhere in Iran that we visited. I mean, everywhere in Iran people were extremely friendly and hospitable, but in Shiraz, people were more like… I think people are known to be laid-back.
-Yes I remember. I came out of the elevator.
-A lot of people that we met in Shiraz was overwhelmingly incredible. So that combination plus the history, pink mosque was spectacular. Unlike anywhere else in the world. Like stained glass windows and… it was beautiful. I really enjoyed it.
- شاید بتوانم در مورد غذاهایی که در شیراز در کنار همدیگر مزه کردیم، جمله مناسبی که میتوانم بگویم این است که غذای بسیار راحت و آرامشبخشی بود. شما اولِ صبح آش که گرم و مناسبِ صبح است را به عنوان شروع میل میکنید، غذای پلویی مثل قنبرپلو، گوجهپلو و... که غذای بسیار راحتیبخش، دلچسب و خوشمزهای هستند و هرگز هم نمیتوانید در یک رستوران این را تجربه کنید را میتوانید در خانه خودتان تجربه کنید و این بسیار برایم حائز اهمیت بوده است.
اما چیزی که در مورد شأن و مردم شیراز میتوانم بگویم این است که مردم بسیار متفاوتی را از سایر شهرهای دیگر دیدم. گرچه همه شهرهای کشور را که بازدید کردیم، فوقالعاده بودند و همه به نوعی منحصربهفرد، ولی مردم شیراز برایم خاصتر بودند انگار زندگی برایشان معنای دیگری داشت. مخصوصا روزی که آمدم تعداد زیادی از این عزیزان را کنار همدیگر دیدم که همه برای خوشامدگویی به هتلم آمده بودند، برایم بسیار جالب بود که در شهرهای دیگر به این صورت و با این حجم تجربه نکرده بودم.
همچنین از نصیرالملک میتوانم صحبت کنم که با آن پنجرههای رنگی که دارد، بسیار تاثیر شگرفی برایم داشت و هیچوقت نمیتوانم آن را فراموش کنم.
- درمورد تخت جمشید و حافظ چطور؟
-What about Takht-e-Jamshid and Hafez?
- That’s also included in Shiraz area. That was a lesson on history and an amazing… I think what stood out to me, because a lot of the buildings and structures are in ruins, is the details. So when you when you look closer you see the carvings and, as Aalijani explained to us, so many historical facts you can depict and find out from the carvings on the rocks. That’s really impressive and incredible to see. And I learned a lot from that by visiting Takht-e-Jamshid.
- در مورد اماکنی که من بازدید کردم از تختجمشید اگر بخواهم صحبت کنم، از دور شبیه یک خرابه بسیار بزرگ و عظیمی است ولی به محض اینکه نزدیک میشویم و جزئیات را از نزدیک میبینیم متوجه میشویم چقدر سِر و جزئیات در خود دارد. توضیحاتی که از آنجا گرفتم متوجه شدم که هر نقش و نگاری چقدر زمینه و چقدر معنی در پشت خود دارد. از کسانی که این سنگنگارها را روی سنگ تولید کردند و نقش ایجاد کردند تا کسانی که در آنجا حضور داشتند، برای من پر از شگفتی و بسیار تاثیربرانگیز بود که بر من تاثیر شگرفی گذاشت.
- از شیراز که بگذریم میخواهیم به عقب برگردیم. بناب را فراموش کردیم، کباب بناب! کبابی که خودمان گوشت خریدیم و با ساطور... اگر یادتان باشد آنجا چقدر مردم جمع شدند و مدام تقاضای عکس میکردند. فکر میکنم واقعا خاص بود. میخواهم نظر شما را بدانم. فکر میکنم نفری 20، 30 کباب خوردیم، ولی وقتی بیرون آمدیم جالب بود که همچنان بعد از خوردن 20، 30 کباب همه گشنه بودیم. توضیحی در مورد بناب هم بدهید چون همه فراموش کردیم.
-what about Bonab? This is the only city that you have to buy the meat from the butchery and then you carrier it to a shop, a very small restaurant, to make Kabab in there. Lots of people gather in it, and they wanted to be photographed. It was really very amazing experience, even for us everybody here in the group. And then, in there we tried lots of Kabab. Maybe each person was trying to tell him it was very impressive but when we were leaving we just felt hungry. What is your feeling about Kabab of Bonab?
- It was two hour drive from Tabriz. I was late at night and we had a long day already, we were all kind of sleepy and we got out of the van in front of… the people came… it was like energy… It was like you could feel the energy.
- They were student?
-Yeah. People came, you could feel the energy, the atmosphere was amazing. You buy your meat, you go to the Kabab shop next door, it’s like the size of a closet. They chop it in front of you, they mix it… it’s a so simple recipe. It’s meat, unions, salt… pepper?
-Yeah.
-But the simplicity and the ratios, the freshness and grabbling it immediately is what makes the difference and the hand chopped mixing, because it not only chops the meat but it mixes it with ingredients way better than any other method, so I think that’s what makes the difference. And it’s really fresh. They serve it immediately. Like, with their hand on the hot Kabab and push it off, which also is the most satisfying sound you’ve ever heard and everybody gathered around. We were eating, and as we were eating, like you don’t believe yourself, you’re eating, you’re eating, you’re eating, you don’t start to get full at all until they’re all gone, and you’re just like goint repeat that again! I could have another 4 kilos of Bonab Kababs. But anyways, that was the experience. It was one of the best Kababs in the world, and it was spectacular. They energy… again, the Bonab Kabab Energy is there!
- به یاد دارم که روز بسیار سختی را داشتیم از صبح تا غروب درگیر کار بودیم بعد مجبور شدیم یک مسافت دوساعته را در اوایل شب طی کنیم. بسیار خسته بودیم، شب قبل هم چندان فرصت خواب نداشتیم، خسته بودیم... با تنی بسیار خسته وارد بناب شدیم. در همان ابتدا چند دانشجو را دیدیم بعد هم که مردم جمع شدند یکدفعه احساس کردم یک انرژی مرا در بر گرفت و همهچیز عوض شد. خودمان رفتیم گوشت خریدیم و گوشتها را به یک رستوران کوچک بردیم، جلوی آن یک تختهای شبیه به یک گنجه بود. همهچیز ساده به نظر میرسید و سیستم بسیار سادهای داشت. محتوای غذا بسیار ساده بود، شامل نمک، گوشت و پیاز میشد. حتی چرخکردن گوشت هم به صورت دستی انجام شد. شاید مهمتر از همه تازهبودن همه مواد ازجمله گوشت، پیاز و سایر مخلفات بود که وقتی با دست چرخ میشد، با هم بسیار بهتر ترکیب میشد که شاید این راز خوشمزگی این کباب بود. نشستیم... غذا آمد... مردم هم جمع بودند. ما فقط میخوردیم... هی میخوردیم... هی میخوردیم... دوباره غذا میآمد... ما میخوردیم... هیچوقت صدای کشیدن گوشت از روی سیخ از گوشم نمیرود. جلوی چشمت گوشت را درمیآوردند و آن صدای جیلز ویلزش همیشه در گوشم هست. ما همچنان میخوردیم... شاید این بزرگترین تجربه این سفر یا شاید تمام عمرم باشد و معتقدم این کباب را هیچوقت، هیچ جای دیگر از جهان تجربه نخواهم کرد.
- اگر دوباره شما را دعوت کنم که فقط بیایید با همدیگر کباب بناب بخوریم قبول میکنید؟
- What if Mr. Taster invites you to just go to Bonab to try Banab Kabab again?
-yeah… that wherever you are in the world, it would be fun to come to Iran just to go to try the Bonab and back!
- من معتقدم که هرجای دنیا باشم اگر چنین دعوتی بشود، میارزد که به ایران بیایم، به بناب بروم، کباب را بخورم، دوباره برگردم...
- سفر بعدی که اصفهان است....
- میخواهیم به اصفهان سفر کنیم و سفری که با کافه «حاج میرزا» شروع شد. آنجا ما علاوهبر گوشکوبیده و دیزی یا آبگوشت، دوغ و گوشفیل را چشیدیم که به نظر من عجیبترین ترکیب دنیاست، ترکیب ترش و شیرین. بعد هم کشک بادمجان را خوردیم که کشک بادمجان اصفهانیها با کشک بادمجان تهرانیها فرق میکرد. روز بعد خورشت ماست و از همه مهمتر بریونی و بعد در انتها فکر میکنم با گز و... تمام شد. جاهای دیدنی زیادی را هم در اصفهان دیدیم. میخواهم بدانم مهمترین غذایی که در اصفهان خورد و خیلی خوشش آمد، چون میدانم که حتی یکی از غذاها را دوبار خورد و چند ساعت بعد به من گفت: «ای کاش یکی دیگر هم میخوردم!» میخواهم بدانم در اصفهان کدام غذا بود که بیشترین حس را به او داد؟ از هتل عباسی، هتل قدیمی و حتی هتل زندیه در شیراز برایمان بگوید که بدانیم این دو هتل را چقدر دوست داشته است؟
-In Isfahan we got started with the very old-traditional tea house, "Haj Mirza". In that we tried the meat’s Kabab, Dizy and the very strange combination of onion and a type of Iranian sweet and very strange taste, sweetness and sour together. We also tried the eggplant and carrot but it is a little different with Tehrani made eggplant and we also tried yogurt stew and also Beryoni, and we tried Isfahani sweet or known as Gaz, and also Ferni…
The second part of question is little different…
Mr. Taster said sometimes you tried a food twice and again you said I wanted to try it again. Did you get the same feeling in Isfahan and if you got, which one was the most favorite one that you are tiring in Isfahan. Most favorite food of Isfahan?
-The favorite. Most definitely, Beryani.
-you had twice…
-Yeah. It’s a heavy dish and you can smell the kind man sitting in the table next to us explaining that. He is the one that says I’m not gonna wash my hands cause I want them to smell my fingers for two days. That was genius. And I’m proud to say I didn’t wash my hands. I can still smell it. But, amazing dish. Amazing process, again. Unlike anything I’ve had anywhere else; the texture the combination. It’s just the home method. Like it goes from step to step, from the limb to the meant to the mixing of the spices, it’s a grill but it’s more like bacon almost. So it sizzles in that little pan…or cup. One of the best parts is where is squashes on melted limb oil fat all over your bread. And the Lung paste. Spectacular, without the doubt that is the highlight of eating in Isfahan.
- شاید راجعبه غذای اصفهان مجبور باشم یکی را مثال بزنم، شاید بریونی اصفهان باشد که دو تا هم خوردم، ای کاش بیشتر میخوردم. خیلی فوقالعاده بود... یادم هست یک نفر در میز کناری نشسته بود و بعد از اینکه غذایش تمام شد میگفت نمیخواهم دستهایم را بشورم تا عطر این غذا چند روزی در دستهایم باشد. من هم گرچه دستهایم را شسته بودم ولی میخواستم بگویم که هنوز بوی غذا روی دستهایم باقی مانده است. واقعا تجربه بینظیری بود، پروسه غذا هم انگار در خانه تهیه میشد. خودم میدیدیم که هر قسمت را چطور تهیه میکردند، سرخ و آماده میکردند، ولی آن قسمتی را که آشپز میآمد و روغن دُمبه را روی نان میریخت و بسیار داغ و خوشمزه بود را هیچوقت نمیتوانم فراموش کنم و بعد هم میآمد بقیه مخلفات را برایت میگذاشت. تجربه بسیار بینظیر و لذتبخشی بود. من از این غذا در اصفهان بسیار لذت بردم.

- I wasn’t going to and then I got a little greasy on the camera and…
-could you tell us your opinion about "Abbasi hotel" and also hotel in Isfahan?
- "Abbasi hotel" in Isfahan is one of the great hotels in the world, historical hotel. What was fantastic about it and I mean like Isfahan many things around are grand, like a mighty scale, and that you can just feel like the power in "Abbasi hotel". The courtyard, the Persian garden, the rooms, the authenticity of it and again like…
There are many modern hotels but I mean "Abbasi hotel" is both; a mix of modern comfort, yet historical authenticity and preservation, and again it is a living museum. And there are so much that adds to your experience of visiting the Isfahan. And I think you must stay in Isfahan just for the historical experience. And also the staffs are amazing. We also had a private tour to some of the off-limit rooms, comfort rooms, dining rooms… (Not audible)
- در مورد «هتل عباسی» شاید اگر شهر اصفهان را به صورت یک مجموعه تاریخی بسیار بزرگ و عظیمی فرض کنیم، همه آن اقتدار و شکوه را یکجا در «هتل عباسی» میتوانیم شاهد باشیم. میتوان گفت در جهان هتلهای مدرن بسیار زیادی داریم، ولی نکته حائز اهمیت در مورد «هتل عباسی» این است که ما راحتی و آسایش و مدرنیته را داریم در کنار اصالت و تاریخ. این ویژگی این هتل را بسیار منحصربهفرد میکند.
راجعبه کارکنان و بخشهای مختلف هتل هم که بسیار فوقالعاده و بینظیر بودند، برخورد بسیار خوبی داشتند. حتی یک تور هم در داخل هتل داشتیم که هرکسی به آنجا برود میتواند این تور را داشته باشد. بازدید از اتاقهای شاهنشین، لوکس و بسیار باکلاس که مزین به طلاکاری و سایر هنرهای ایرانی بود که بسیار بینظیر است.
- به چابهار سفر کردیم که آخرین سفر ما بود. البته بعد به تهران آمدیم. راجعبه تهران هم سوال خواهم پرسید. اینکه بههرحال در چابهار ما شکارپز را و کلهی بز – کلهپاچه بز- را و کراهی را داشتیم. درنهایت هم صبحانه بلوچی و بازار و بریانی را داشتیم. میخواهم بدانم چه چیزی در چابهار برایش از همه جالبتر بود؟ چون بههرحال به هند و پاکستان هم سفر کرده بود و تا حدودی غذاهای نزدیک به هم و حتی غذاهای خیابانی را که با همدیگر taste کردیم مثل حلیم هندی و کبابهایی که داشتند... در چابهار چه چیزی برایش جذابتر بود و کدام غذا برایش جالبتر و جدیدتر بود؟
-The last destination in from Tehran was Chabahar. In Chabahar we experienced Shekarpaz, the head of the goat, and we also tried Karahi and even we had a breakfast, we tried it in the Bazar of Chabahar also some Beryani. We know you had traveled in India and Pakistan and in Chabahar we tried Hindi Halim some different types of foods in the streets.
What is your most favorite food in Chabahar?
- Kalle pache, was just on another level. That was special food. That wasn’t an everyday food. I also loved the Halim because all those toppings, all those spices, The Head (Kalle pache) and Shekarpaz were on another level. I mean, it can hardly be compared to anything else, because it was so special and the method was so impressive and so unique. It was actually simple and the most simple form of cooking is fire and meat and hunting, cooking, just the fire that it means it had existed since thousands and thousands of years… and still nothing can top that.
What I also like is fire and meat. Fire and meat combination is all over the world. But method is different all over the world. And so a unique barbeque style, in the sand, with the date palm skewers punctured into the meat, stuck into the sand with fire coming from the both sides. They got the smoke, they got the indirect flame. And literally after 15 minutes the juice started dripping. And yet at the same time it remained juicy in the inside, and crispy, but juicy in the inside. [you] put the head inside the stomach with the intestines and the hoofs, wrap that up, stuck it into some foil into hot sand and coals on top of it, and you will hear the sound of boiling, and that amazing and delicious. And it was melting, like the whole face was melting and gelatinous and amazing. That was on side of the food, the other side of the food was that the restaurants and street [foods] that we tried. The Halim was amazing, the Kababs and the fish, the Martian mountain is unique throughout the world and impressive to see. Walking through the Bazar, I loved that experience. I think Chabahar is the spice capital of Iran. A lot more dry spices are used. Balouchi people are extremely welcoming. I would have loved to have more time there.
- در مورد غذایی که در چابهار خوردم شاید کله پاچه مورد بسیار خاصی برایم محسوب شود. فاز بسیار بالایی داشت، اصلا قابل تصور نبود و اصلا نمیتوانم آن را با هیچ چیزی مقایسه کنم، همتراز با آن شکارپز را هم هم به همین صورت. اصلا هر دوی این غذاها در یک فاز و در یک رده دیگری قرار میگیرند و قابل مقایسه با هیچ غذای دیگری نیستند. میتوانم بگویم در همه جای جهان بیس کار بدون شک آتش و گوشت است، خب درست! ولی در اینجا ما سیخهایی از برگ درخت خرما تهیه میکنیم بعد گوشت را به آن میکشیم، روی زمین قرار میدهیم، آتش را در دوطرف ایجاد میکنیم و بعد صدای سرخشدن گوشت را میتوانیم بشنویم. روی گوشت بسیار ترد میشود، درعینحالی که داخل آن پرآب و بسیار خوشمزه است.
لذا این دو غذا را - باز هم تاکید میکنم- بسیار منحصربهفرد بوده و اصلا نمیتوانم با هیچ چیز دیگری مقایسه کنم. انگار مثل شکاری است که شما شکار میکنید، بعد آتش را در آنجا درست میکنید و غذا را آماده میکنید. این خودش نشان میدهد که یک سابقه تاریخی پشت این است و به این دلیل این غذا بسیار منحصربهفرد میشود.
اما کله پاچه را -بازهم تاکید میکنم- فاز بالایی داشت، داخلش سرِ بز را قرار داده بودند و داخل یک فویل گذاشته بودند، صدای جوشکردنش را میتوانستم بشنونم و وقتی هم آن را نصفهشب نوش جان کردیم، بسیار منحصربهفرد بود. هیچوقت این را نمیتوانم فراموش کنم.
بعدازظهر هم که سراغ غذای رستورانی رفتیم، حلیم، انواع کبابها و ماهیها را خوردیم که بسیار خوشمزه بود. شاید بتوانم چابهار را به عنوان پایتخت چاشنیهای ایران معرفی کنم که از این بابت منحصربهفرد است. بخش دیگری از شهر چابهار که شامل کوههای مریخی بود بازدید کردیم که آن هم بسیار در جهان منحصربهفرد به نظر میرسد.
- در مورد تهران هم بهطور خلاصه بگویید. ما روز اول به برج میلاد رفتیم، برج آزادی را بازدید کردیم و خیلی در تهران نبودیم. روز آخر هم باملند را دیدیم و همینطور صبح هم هدیه زیبایی از طرف «رستوران بلامونیکا» دریافت کردیم و همینطور آقای رفتاری...
میخواهم بدانم در تهران چه احساسی داشت؟ خب اینجا دیزی را خورد و خیلی غذاهای تهران را مزه نکرد ولی میخواهم بدانم در مجموع با این سفر راجعبه تهران چه ذهنیتی پیدا کرد؟ البته میدانم در تهران خیلی کم بودیم یعنی نسبت به روزهایی که باید در تهران میشد شاید ما در این سفر به تهران کملطفی کردیم ولی واقعا وقت کمی داشتیم و زیباییهای شهرهایی که عنوان کردیم بسیار زیاد بود. البته شب اول به رستوران «کوهپایه» دربند رفتیم.
- As you know we had a short time to stay in Tehran. We had some opportunity to visit Milad tower and also Azadi monument and we actually experienced Koohpaye restaurant at the first night at the full of the mountain and then some of the restaurants like "Belamonika" and Mr. Raftari gave us some very nice gifts, also the boating in Bamland… Anyway we know it was quite the short time in Tehran and maybe there were not the much time to Tehran in local foods but could you tell us what is your feeling about Tehran the local foods you tried in the capital?
-I guess what’s interesting about a major city, biggest city, is that it attracts people and people come from all parts of the country, Iran to Tehran. And so you can find your favorite food. So you find food in Tehran from everywhere from around Iran. It’s the diverse first made up of many people and you experiences as you can have are like that.
I’m impressed by Tehran, the modern-ness of the city, we tried on a boat, we hiked-up a mountain, and an amazing dinner which they hosted us at "Koohpayeh". …. So many delicious food, then we went to "Bella [Monica]" restaurant where they presented us with the most precious gift that we received, the Persian carpet so thank you for everyone who is a part of that. It’s a one thing that I will cherish the whole of my life. And then on to Bamland restaurant, Mr. Rastari. And again they were so welcoming, they owner and his family. Again, the food was delicious and mix of different dishes.
- در مورد شهر تهران شاید بشود حدس زد که قاعدتا پایتخت کشور محل تجمع مردم شهرهای دیگر است و بر این اساس میشود باز هم حدس زد که قاعدتا در منوی رستورانها یک تنوع غذایی بسیار بالایی از شهرهای مختلف را در این شهر داریم. قاعدتا تنوع بالای این مردم میتواند نشاندهنده گستردگی غذاهای پایتخت هم باشد. اما در تهران من مدرنیته را بیشتر دیدم و میتوانم راجعبه این شهر بسیار عظیم و بزرگ صحبت کنم. از جاهای مختلف بازدید کردم. امروز قایقسواری رفتم که برایم جذابیت زیادی داشت. شب اول در رستوران «کوهپایه» بودم که غذاهای بسیار خوشمزهای داشت. در رستوران بلامونیکا بودم، آنجا به من هدایای بسیار ارزشمندی از جمله یک فرش بسیار زیبا داده شد. در رستوران باملند و در بخش دروازه تهران حضور پیدا کردم و غذای دیزی و کوفته تبریزی را خوردم که تجربه بسیار خوبی بود. ضمن اینکه آقای رفتاری، مدیریت محترم رستوران بودند که آمدند و به ما خوشامد گفتند و برخورد بسیار خوبی داشت و روز بسیار خوبی را برایمان رقم زد.
- در مورد تاریخچه تبریز و بازاری را که دیدیم و بناهای تاریخی مثل تاریخچه مسجدی که رفتیم کمی برایمان توضیح دهید که در مورد اماکن تاریخی تبریز چه حسی داشتید؟
-Would you tell us your opinion about the history sites of the city, Tabriz, you have visited the grand bazaar of Tabriz one of the sections on the name of Safavid Timche, also the Friday mosque of Tabriz.
Please let us what was there and what is your opinion about the historical background of the city?
-The history in Tabriz the grand bazaar was a highlight [to me], because it’s a living museum. You can just feel that it’s the since from hundreds of years. And it is so authentic. Because it’s not catering to souvenirs, it’s not catering to visitors, it’s for the people. And so it’s a living museum that’s completely authentic that people go there on a regular basis to buy supplies, to buy anything available. And its preservation, it’s an amazing place; it’s like stepping back in time. I love just walking around and the grand bazaar; it was a highlight to me.
- در مورد تاریخ شهر تبریز و بازار قدیم که ما فرصت پیدا کردیم در آن قدم بزنیم و بازدید کنیم، میتوانیم بگوییم این یک موزه [زنده] بسیار بزرگی است و از قرون بسیار گذشته و دارای بازدیدکنندگان فراوان است و مردم زنده شهر جهت خریدوفروش و تهیه مایحتاج به اینجا سر میزنند و حضور پیدا میکنند. لذا برای من شبیه یک تونل زمانی است که من علاوهبر اینکه در قرون مختلف سیر میکنم، میتوانم مردمِ زمان حال جامعه را ببینم و از این بازدیدم لذت ببرم.
خب به شیراز سفر کنیم. شهری که توانستیم جاهای تاریخی زیادی از این شهر را ببینیم مانند مسجد نصیرالملوک...
- چه شد که اصلا دعوت ما را قبول کردید؟ دیدار ما به بانکوک برمیگردد زمانی که من سفر را طولانیتر کردم که فقط مارک را ببینم. آیا آن سفر در قبول دعوت من به ایران تاثیری داشت؟ یا خودش دوست داشت به ایران بیاید؟ چون خیلیها سوال میکردند که چرا به ایران نمیآید؟ با اینکه یک سری شبکهها برنامههایش را نشان میدادند. جریان چه بود که به ایران نمیآید و میخواهم بدانم چه چیزی از همه مهمتر بود که باعث شد دعوت ما را قبول کند؟
-Mr. Taster is travel to Bangkok and even he had to extend the visa to visit and invite you to Iran to make report and take your videos and then in that time there were lots of people asking him why Mark never ever travelled to Iran to make some videos about Iranian’s food but Why he didn’t get any decision to travel to Iran? And then finally you decided to travel to Iran. Was there any reason maybe you met each other in Bangkok and you decided com to Iran or no you made your own decision?
-What was the most important reason you travel to Iran?
- Actually, years ago I started to get messages from people from Iran all over the social media, emails, lots of Instagram; come to Iran, welcome to Iran, when are you gonna come to Iran, every day, for years. And then I had the honor to meet Mr. Taster when he came to Bangkok almost two years ago. And so, he is the one who was able to facilitate it, to make it happen and organize it. From long ago I wanted to visit… I mean, I’ve known Persian culture is ancient, the food. I didn’t have much experience with the food before coming to Iran, so it was a huge learning experience for me by coming here. But I knew the ancient culture; I knew about the Kababs, I had tried a few dishes at restaurants, like in L.A or other places, but not very much. And so I was curious and very eager to come to Iran for years. And so when we finally got everything in together, it was a huge honor to have a chance to visit Iran. And again thank you to everyone; Mr. Taster, Hamid and Pegah, Alijan and tour organizations, Qasr-e-Setareh and everyone who came together to… All the different pieces coming together to make it happen, without all of them it wouldn’t have been possible. Yeah, I wanted to visit Iran for a long time. And I’m so happy to say that. We had a privilege to visit.
- شاید بهتر است بگویم از سالها قبل پیامهای بسیار زیادی را از طریق رسانههای جمعی ایران، ایمیلها، تلگرام، اینستاگرام و از کسانی که از طرق مختلف سعی کردند این پیام را به من بدهند که باید بیایم از ایران بازدید کنم و ویدئو تهیه کنم، دریافت میکردم. هیچوقت این ذهنیت را نداشتم که باید به ایران مسافرت کنم تا این اتفاق افتاد و مفتخر به ملاقات با مستر تیستر در بانکوک شدم و متوجه شدم که باید این سفر را بروم. میدانستم که فرهنگ ایران بسیار باستانی است و چنین فرهنگی لابد غذاهای بسیار متنوع و فوقالعادهای را در خود دارد.
من قبل از این، از رستورانهای ایرانی مختلفی از جمله در لسآنجلس بازدید کرده بودم و غذاهایش را خورده بودم و این باعث شد حس کنجکاویام بیشتر تحریک شود و بیشتر مترصد به سفر به ایران شوم و درنهایت از طریق ملاقات با حمید و دیدنش مترصد شدم و تصمیم گرفتم این سفر را انجام دهم. خیلی خوشحالم که این سفر انجام شد. همیشه دلم میخواست بیایم و خیلی خوشحالم که آمدم و این سفر صورت گرفت و من توانستم این تجربه را در اینجا رقم بزنم.
- اگر بخواهید فقط یک غذا و یک محصول مانند خاویار، گز یا زعفران و یک صنایع دستیای که امضای ایران باشد را نام ببرید چه چیزهایی را میگویید؟
-you were tried different things in Iran and it’s the possible to tell us which food can be the signature of Iranian foods in your mind and second you have tried some product like caviar and some dessert like Gaz or Nogha in Isfahan and saffron so what would be your choice or taste of products. And finally you have seen lot of different handicrafts so if it would be possible to select one of the handicraft as a signature for a country, [what would you choose…]
Let’s start a food…
- Kababs. Kabab is amazing and one of the best things in the world and Iran has the best Kabab in the world but I think is that Kababs are so well known. So for me even maybe more especial stews of Iran. The Gormesabzy is an amazing dish.
-You forgot that in the Shiraz…
-and Fesenjoon… Some of the stews are unbelievably good. There are also dishes that could get a lot of attention I think. But some of the dishes like Ghormesabzy are so unique and well-known to Iran. In terms of single products, nothing can beat the caviar.
Saffron is also the best in Iran. And when you think about it so many things are flavor in saffron. It’s so important for the quizine of Iran.
For the handicraft I think nothing represents the history, the hospitality and the people more than [Persian] carpets, without a doubt.
- شاید بتوانم کبابهای بسیار خوشمزه ایران را به همه پیشنهاد کنم. همهی کبابهای ایران فوقالعاده هستند. بدون شک بهترین کبابها را میتوانید در کشور ایران تست و مزه کنید و این را همه میدانند و من هم شکی در مورد کبابهای ایران ندارم. راجعبه خورشتها میتوانم قورمهسبزی را بگویم که خورشت منحصربهفرد ایران است و این را میتوانم به همه پیشنهاد کنم. اما از فسنجون و همه خورشتهایی که در شمال کشور هم خوردیم باید صحبت کنم آنها هم منحصربهفرد بودند.
خاویار را به عنوان یکی از محصولات بسیار منحصربهفرد کشور میتوانم معرفی کنم. طعم و مزه خیلی خارقالعادهای دارد و بسیار فوقالعاده است. زعفران هم از جمله مواد غذایی بسیار مهم و بسیار شایع برای تهیه همه غذاهای ایرانی است را باید نام ببرم. اما هیچ چیزی در صنایع دستی کشور به اندازه فرش نمیتواند تاریخ، مردم و فرهنگ ایران را منعکس کند.
-and also olives with walnut and pomegranate paste that’s unique and incredible.
- و همچنین فراموش کردم این نکته را در مورد زیتون پرورده بگویم، ترکیبی از مغز گردوی ایرانی؛ زیتون و رب انار که بسیار لذیذ و خوشمزه است.
- در مورد میوه چطور؟ البته فکر میکنم انار باشد.
-what about fruit?
- The best pomegranate…
- انار را هم به عنوان بهترین میوه ایران مزه کردند و میتوانند پیشنهاد کنند.
- اگر بخواهد از بهترین خاطرهای که در اینجا دارد یاد کند چه خواهد بود؟
-What is the best moment you made in Iran and you will remember it in your all life?
-everything… but I think having all of the experiences and getting back to Tehran and presentation of the Persian carpets. This is the most special, heartwarming but also memorable scene and also the emotions and everybody.
-Maybe one million K…
-yes and the [boo?] Tick party… yes, never forgot the Chabahar surprise; one million Instagram party. That was totally unexpected and I was shocked and scared. But yeah, that was an incredible surprise and that was an amazing celebration… it was amazing…
- برایم واقعا سخت است که بتوانم انگشت بگذارم و یک لحظه را به عنوان بهترین خاطره خوش برای شما بگویم، ولی میتوانم همه را یکجا بگویم که کل این سفر برایم خاطره است و لحظه لحظهاش برایم خاطره است و هیچوقت نمیتوانم فراموش کنم. از شهرهای مختلف بازدید کردم و بعد وقتی به تهران برگشتیم و آن لحظهای که آن فرش بسیار نفیس را جلوی چشمهایم دیدم که به عنوان هدیه به من داده شد و توضیحات مربوط به آن را میشنیدم، یکدفعه یک تاثیر بسیار خاصی را در ذهنم گذاشت که هیچوقت نمیتوانم فراموش کنم، اما شاید جشن یک میلیون نفری، تیکی که در مورد ایران آورده شد و در لابی بومگردی دور بلوچ سوپرایز شدم را شاید هیچوقت فراموش نکنم یا بهتر است بگویم ترسیدم و جیغی که مستر تیستر کشید...
- دوباره کِی برمیگردید؟
-we are waiting for you for the second trip to Iran. When will happen in the future?
-Thank you very much…maybe will stay! Hopefully soon.
- و در آخر میخواهم از ایشان تشکر کنم که [به اینجا] آمد. فقط یک نکته را بپرسم. اگر بخواهد برای برندینگِ بیشتر غذاهای ایرانی به ما پیشنهاد کند و ما را نصیحت کند چون تابحال اتفاق خاصی در غذاهای ما نیفتاده است با اینکه تنوع غذای ایرانی در دنیا تک است چه کار باید کنیم؟ اگر خودش جای یک ایرانی بود برای برندینگ غذای کشورش چه کار میکرد؟
-The question, supposing that you are Iranian person. So what would you do to make the Iranian’s food that has such a great variety, but what would you do to make it as a brand in the world.
We need your suggestions to make the Iranian food very popular with the whole world.
-I think again it’s about focusing on the best of the ingredients that make up Iranian quizine, and also unique products, and unique combinations, like the unique dishes. For instance the olives, walnuts and pomegranate paste. I never tasted anything like that. My first bite, again just blew me away with contrast of flavors. People taste that in first bite, and like something like that. You immediately be interested in more. And I think on top of that, it’s about, again, the hospitality and the more of the people, people put in love with the food. And so that stands out. That can be what really interests more and more people throughout the world to try more more Iranian food. It’s that combination of amazing contrast of flavors in one bite. I guess people interested in warm draw of people and hospitality; I think that what is really powerful.
- شاید بتوانم بگویم که تاکید بر محتوای غذاها و پیداکردن ترکیبات بسیار خاص و منحصربهفرد و بعد درآوردن یک ترکیب نهایی که بتواند آن طعم و آن مزه خاص غذای ایرانی را با کیفیت بسیار عالی معرفی کند و بعد ترکیبکردن همه اینها با چاشنیها و مواد مختلف باکیفیت باعث میشود که مردم بخواهند بیایند و از غذای ایران بیشتر استفاده و میل کنند، ولی شاید مورد اصلیتر که باعث انگیزهدادن به توریستها برای آمدن به ایران برای استفاده از غذای ایرانی شود، روی خوش و خوشامدگویی به توریستها است که همه را بدون شک تهییج میکند تا وارد ایران شوند و بیایند از غذای ایرانی استفاده کنند.
- آیا معتقدید که غذا زبان صلح است؟
-Do you believe in that peace expression that food is the language of peace?
-yeah for sure…
- بدون شک همینطور است و غذا واقعا زبان صلح است.
-food can like bring down walls and connect people from everywhere in the world, I believe.
- من معتقدم که غذا میتواند باعث جلوگیری از وقوع جنگها (فروریختن دیوارها بشود) و مردم را دور هم جمع کند تا بنشینند و با همدیگر غذا بخورند و به دوستی و صلح برسند.
- و درنهایت باز هم برای آمدنتان به ایران تشکر میکنم. از خودش، از همسرش، از مایکا. به ما بسیار خوش گذشت. باز هم ممنون که با استفاده از ابزارش غذای ایران را به دنیا معرفی میکند.

- سلام به همه دوستان گلم. امیدوارم خوب باشید. امروز، روز آخری است که ما در خدمت مهمان عزیزی هستیم که در این چند وقت شاهد سفرها و گزارشهایش از غذاهای مختلف بودید و قرار است که یک interview با ایشان داشته باشیم و بتوانیم سوالاتی که در ذهن خیلیها بود و مدام از ما میپرسیدید، از ایشان سوال کنیم و انشاءالله شما هم به جوابهایتان برسید.

- درواقع در این سفر شاهد بودید که ما به رشت سفر کردیم، شهر بعدی تبریز بود، بعد شیراز بعد اصفهان و بعد هم چابهار و در تهران هم چند روزی بودیم -فکر میکنم فقط دو روز بودیم - سعی کردیم باز هم گزارشهای مختلف بگیریم.
- خیلی خوش آمدید و امیدواریم این سفر خوب بوده باشد. چه حسی دارید؟ در ابتدا کلیت سفر را توضیح دهید که چطور بود؟
-Mark, we are very dignified of your presence in Iran. Welcome to Iran. Just Let us know your opinion about the country, the people and the culture.
-from the moment we arrive to Iran, actually even from the moment we got an airplane from Bangkok. it was people just welcoming us people say welcome to Iran, we’re so happy that you’re visiting, meeting Ali, meeting Mr. Taster, meeting Hamid, Pegah,… at the airport then just the warmest welcome and throughout our trip. People just giving us gifts, People coming to say hi… People, amazing people, that’s what stands up the most and entire trip was filled with fun, amazing food, experiences beautiful places, beautiful people.
- بسیار خرسندم از اینکه این مطلب را توانستم به سمع و نظرتان برسانم. از همان لحظه اولی که وارد پرواز شدیم بسیار موردتوجه مردم قرار گرفتیم، همه با آغوش باز از ما پذیرایی کردید. موقعی که به فرودگاه آمدیم، با راهنمایمان روبهرو شدیم. بعد با آن وضعیتی که سراغ مستر تیستر آمدیم و ایشان را در حالت پیتزا خوردن دیدیم...
- داشتند پیتزا میخوردند...
- و بعد به همین صورت از فرودگاه خارج شدیم. باز هم مردم سر راه ما آمدند، همه جا با هدایای مختلف، شکلات و خیلی چیزهای دیگر سعی کردند به ما خوشامد بگویند و ما را خوشحال کنند که از این بابت بسیار خوشحال هستم.
- تجربه اول مارک به شهرستان رشت و ماسوله مربوط میشد. میخواهم بدانم که تجربه غذایی که آنجا داشت از کدام غذا بیشتر خوشش آمد؟ آنجا چه حسی داشت؟ چه چیزی بیشتر از همه نظرش را در این شهر جلب کرد چه بحث خود روستای ماسوله یا خود شهر یا غذاهایی که خورده است؟ میخواهم بدانم چه چیزی در این شهر از همه جذابتر بود؟
- Let’s preview the trips to different parts of the country. The first City we travelled was Rasht and then we got to the actually some small cities and the village of Masule and then we visited different restaurants and different places. Would you tell us what is your opinion about the food we tried in the north of the country, the history and the historical background, the architecture and the people of the North, please?
-especially the Rasht or …?
-No just Rasht and Masule.
- Rasht and Masule… ok. I think for me the north of Iran really stands out, because for me personally, it was ingredients and combinations of food that I’ve never tried anywhere else in the world. It was unique, so unique, especially the walnuts the pomegranate paste, like harmony and sour and sweet and the amazing Smokey eggplant … not just the combinations, I even like a lot of healthy ingredients which nurture the body. It was spectacular.
That was very interesting to me. People again were just extremely welcoming and so friendly. We met, not even a single day by meet at least 50 people welcoming us to Iran and being able to see the Caspian sea was also spectacular and the Caviar…
-oh caviar… I forgot it…
- Caviar... I just was once in a life’s experience. The freshest, and actually the best ever caviar in the world.
- اگر بخواهم راجعبه شمال کشور صحبت کنم میتوانم در کل بگویم بسیار عالی بود، نظرم را خیلی زیاد جلب کرد. راجعبه محتوای غذاها باید بگویم ترکیب بسیار شگفتانگیزی بود. از گردوها و رب انار... بهطورکل آن بالانس بین ترشی و شیرینیای که در آشپزیهای آن منطقه از کشور میتوانیم شاهد باشیم و همچنین استفاده از بادمجان و سایر مواد غذایی که هم مقوی بودند و هم درعینحال بسیار سالم و سلامت بودند. اگر بخواهم راجعبه مردمش در یک جمله صحبت کنم، فوقالعاده بودند، با روی بسیار باز و دوستانه. روزی نشد که ما چندین یا چند نفر را ملاقات نکنیم که آمده بودند به ما هدایا بدهند و خوشامد بگویند و تجربه بسیار منحصربهفردی را با مردم شمال کشور داشتیم. راجعبه دریای خزر هم میتوانم بگویم که به آنجا رفتیم و قدم زدیم و تجربه بسیار منحصربهفردی بود و خاویارش را هم که نگویم! میتواند بسیار عالی و زبانزد در تمام جهان محسوب شود.
- در مورد خود ماسوله چطور؟
-what about the architecture of part of village Masule?
- Masule is unique because it’s built on the side of the mountains and your yard is on top of the neighbor’s house below and so it creates a unique community, for you’re always connected with everybody within the village in Masule. It’s like a warm feeling, people are connected, people are… you know everybody around you and so that gives a uniqueness that it’s really about the people, which I really liked.
- شاید بهطور کلی بخواهم صحبت کنم چیزی که ذهن مرا به خودش مشغول کرد و میتوانستم فقط از آن صحبت کنم این مطلب باشد که به فرض حیات خانه شما، سقف همسایه بعدی است. به این ترتیب من در ارتباط مستقیم و بسیار نزدیک با همسایهام هستم و این ارتباط بسیار ارزشمند و حائز اهمیت است که برای من میتواند بسیار جذابیت باشد.
- و اما برویم سراغ تبریز و اینکه از خود تبریز شروع کنیم. چون یک اتفاق جالبی که افتاد و البته عدهای از دوستان تبریزی ما گلایه میکردند میگفتند چرا مارک فقط سیبزمینی را گذاشته؟ البته شاید خبر نداشتند که ما یک تور کاملی در بازار داشتیم که غذاهای مختلفی را مزه کردیم و... اول از تجربهاش برایمان بگوید و بعد راجعبه کارش بگوید. چرا آن ناحیه برایش جذاب بود، ولی ما اگر به یک رستوران لوکس میرفیتم شاید انقدر برایش جذاب نبود. چون برای تبریزیها بیشتر از همه سوال شده بود که چرا رفتید بازار یا از گاریها گزارش گرفتید؟ من فکر میکنم اگر نوع کارش را بتواند توضیح دهد شاید دوستان تبریزی هم جوابشان را بگیرند. ضمن اینکه ویدئوی کامل هم هنوز خارج نشده، چون اگر خارج میشد قطعا دوستان میدیدند ما کوفته تبریزی و جلز بلز را چشیدیم، چلوکباب «حاج علی» در بازار را هم همینطور. فکر میکنم در ابتدا یک توضیحی راجعبه تجربهاش بگوید و اینکه این ویدئوها را چطور انتخاب میکند و اصلا کلیت کارش را توضیح دهد که دوستان تبریزی هم قانع شوند.
-the second city in travel was Tabriz. In Tabriz mostly the people watch your video of the potato and the egg and the bread. I have no idea about that I’m going videos in the future. For us also it’s interesting to know why you have paid such a great in pay attention to the standup potato and egg and bread in the market but ‘No’ to a five star restaurant in the city. Because all of the Tabriz’s people just very interested to show the best ones in their city and they expected Mr. Taster to show the very high-class areas, or the city center over downtown. So of course they don’t know in the future you’re video would get some idea about for example Kofte, the Liver, the Heart and the Kidneys, also… iz Kabab in Bazar.
Could you tell us what is your strategy to produce your videos, for example you don’t take videos from five star restaurants but from simple restaurants in the city center. What is your strategy? Or actually, what is your philosophy in taking videos?
-For me in it back to the philosophy and to the fact that food… there is no food without people. People make food, people join together for food, people come together because of foods. And so, when something so simple like that is available and every street food-stall within Tabriz, everybody can eat it, everybody can enjoy it and people and friends from everywhere and economic level can hang out and eat. You can share it together. So that’s why something so simple like that is so significant, and so beautiful, and that’s why I love to eat things like that. And even us, we had two nights in a row, or two days in a row, the simple potato egg wrapped up in bread, with a little mint on it, and butter. And both times it was just us standing around. We met people. People came, playing music and that’s because of a simple food that everybody can come together and eat. But that being said, we ate a lot more in Tabriz as well.
- در مورد توضیحاتم راجعبه این سوال باید بگویم فلسفه و واقعیت را اگر در نظر بگیریم این مطلب بسیار حائز اهمیت است که مردم جمع میشوند تا غذا را درست کنند، مردم جمع میشوند تا غذا را میل کنند. این مردم میتوانند از طبقات و مشاغل مختلف باشند که در یک بازار، دور یک دکه سیبزمینیفروشی دور هم جمع میشوند و بدون هیچ محدودیتی از یک غذای مشترک استفاده میکنند و از آن لذت میبرند. اینها میتوانند از هر جای شهر باشند. بدون اینکه اصلا به جایگاه و کلاس اجتماعیشان توجهی داشته باشیم، میبینیم در کنار همدیگر لذت میبرند و از غذا میل میکنند. نمونه بارز، خودمان که در چند جای شهر، دور دکههای سیبزمینی جمع شدیم، گفتیم، خندیدیم و این ساندویچ که همان سیبزمینی و تخممرغ باشد، میل کردیم و کلی هم خوش گذشت. لذا قاعدتا میتوانم بگویم برنامه ویدئویی تبریز بسیار پربار است و در آینده وقتی آپلود میشود باید دید که جوانب مختلف غذایی شهر تبریز را در بر خواهد گرفت.
- ما به شیراز آمدیم. جایی که توانستیم غذاهای مختلفی را مزه کنیم. علیرغم اینکه زمان بسیار کمی داشتیم یعنی شب به شیراز رسیدیم یک روز را در آنجا بودیم و صبح روز بعد به سمت اصفهان حرکت کردیم. تقریبا میتوان گفت یک روز و نصفی در شیراز بودیم، ولی به اماکن مختلفی سر زدیم مثل تحت جمشید، مسجد نصیرالملک و جاهای تاریخی دیگر و همینطور غذاهای خوشمزهای مثل آشِ سبزی، گوجهپلو، کلمپلو و قنبرپلو و غذاهای دیگری که آنجا خوردیم. از خانه پرهامی دیدن کردیم و اتفاقات خوب دیگری که در شیراز افتاد. نظر شما راجعبه شیراز چه بود؟ از غذاها شروع کنیم که کدام غذاها بیشتر از همه مورد توجه شما قرار گرفت؟ بین آش و غذاهایی که در خانه پرهامی خوردید و تستهای دیگری که داشتید. به ما بگویید دقیقا در شیراز چه حسی داشتید؟
- Let’s review Shiraz. In Shiraz we got very lucky to visit some historic sites like the (some) mosques, the grand bazar, also bath-house of Shiraz, the main gate to the bazar. And in there, however we got the very short time to visit and to test different foods but we were very fortunate to have some very samples of Shirazi foods like Iranian vegetable noodle and tomato rice and also Ghanbarpolo and we visited "Parhami house" in Shiraz, and also we tried Shirazi ice cream that was Faloode or Paloodeh.
Could you tell us your opinion about the foods and the noodles and the desserts we tried in Shiraz?
-Shiraz has the Ash Sabzy and Halim. I think to me the food in Shiraz was like the ultimate comfort food. The Ash is something good to eat in the morning and feel so good in the morning than all of the different rice dishes like Kalam-polo, tomato-rice, ghanbar-polo. Those are like dishes that you can eat any day, every day, [they] always taste amazing and always like comforting. And the best kind of home cooking food that wouldn’t taste the same at a restaurant, but it would taste so good, amazing home cook. They are really like some of the most comforting food in Iran. On top of that, I think Shiraz also stands out as some of the friendliest, most laid-back people than anywhere in Iran that we visited. I mean, everywhere in Iran people were extremely friendly and hospitable, but in Shiraz, people were more like… I think people are known to be laid-back.
-Yes I remember. I came out of the elevator.
-A lot of people that we met in Shiraz was overwhelmingly incredible. So that combination plus the history, pink mosque was spectacular. Unlike anywhere else in the world. Like stained glass windows and… it was beautiful. I really enjoyed it.
- شاید بتوانم در مورد غذاهایی که در شیراز در کنار همدیگر مزه کردیم، جمله مناسبی که میتوانم بگویم این است که غذای بسیار راحت و آرامشبخشی بود. شما اولِ صبح آش که گرم و مناسبِ صبح است را به عنوان شروع میل میکنید، غذای پلویی مثل قنبرپلو، گوجهپلو و... که غذای بسیار راحتیبخش، دلچسب و خوشمزهای هستند و هرگز هم نمیتوانید در یک رستوران این را تجربه کنید را میتوانید در خانه خودتان تجربه کنید و این بسیار برایم حائز اهمیت بوده است.
اما چیزی که در مورد شأن و مردم شیراز میتوانم بگویم این است که مردم بسیار متفاوتی را از سایر شهرهای دیگر دیدم. گرچه همه شهرهای کشور را که بازدید کردیم، فوقالعاده بودند و همه به نوعی منحصربهفرد، ولی مردم شیراز برایم خاصتر بودند انگار زندگی برایشان معنای دیگری داشت. مخصوصا روزی که آمدم تعداد زیادی از این عزیزان را کنار همدیگر دیدم که همه برای خوشامدگویی به هتلم آمده بودند، برایم بسیار جالب بود که در شهرهای دیگر به این صورت و با این حجم تجربه نکرده بودم.
همچنین از نصیرالملک میتوانم صحبت کنم که با آن پنجرههای رنگی که دارد، بسیار تاثیر شگرفی برایم داشت و هیچوقت نمیتوانم آن را فراموش کنم.
- درمورد تخت جمشید و حافظ چطور؟
-What about Takht-e-Jamshid and Hafez?
- That’s also included in Shiraz area. That was a lesson on history and an amazing… I think what stood out to me, because a lot of the buildings and structures are in ruins, is the details. So when you when you look closer you see the carvings and, as Aalijani explained to us, so many historical facts you can depict and find out from the carvings on the rocks. That’s really impressive and incredible to see. And I learned a lot from that by visiting Takht-e-Jamshid.
- در مورد اماکنی که من بازدید کردم از تختجمشید اگر بخواهم صحبت کنم، از دور شبیه یک خرابه بسیار بزرگ و عظیمی است ولی به محض اینکه نزدیک میشویم و جزئیات را از نزدیک میبینیم متوجه میشویم چقدر سِر و جزئیات در خود دارد. توضیحاتی که از آنجا گرفتم متوجه شدم که هر نقش و نگاری چقدر زمینه و چقدر معنی در پشت خود دارد. از کسانی که این سنگنگارها را روی سنگ تولید کردند و نقش ایجاد کردند تا کسانی که در آنجا حضور داشتند، برای من پر از شگفتی و بسیار تاثیربرانگیز بود که بر من تاثیر شگرفی گذاشت.
- از شیراز که بگذریم میخواهیم به عقب برگردیم. بناب را فراموش کردیم، کباب بناب! کبابی که خودمان گوشت خریدیم و با ساطور... اگر یادتان باشد آنجا چقدر مردم جمع شدند و مدام تقاضای عکس میکردند. فکر میکنم واقعا خاص بود. میخواهم نظر شما را بدانم. فکر میکنم نفری 20، 30 کباب خوردیم، ولی وقتی بیرون آمدیم جالب بود که همچنان بعد از خوردن 20، 30 کباب همه گشنه بودیم. توضیحی در مورد بناب هم بدهید چون همه فراموش کردیم.
-what about Bonab? This is the only city that you have to buy the meat from the butchery and then you carrier it to a shop, a very small restaurant, to make Kabab in there. Lots of people gather in it, and they wanted to be photographed. It was really very amazing experience, even for us everybody here in the group. And then, in there we tried lots of Kabab. Maybe each person was trying to tell him it was very impressive but when we were leaving we just felt hungry. What is your feeling about Kabab of Bonab?
- It was two hour drive from Tabriz. I was late at night and we had a long day already, we were all kind of sleepy and we got out of the van in front of… the people came… it was like energy… It was like you could feel the energy.
- They were student?
-Yeah. People came, you could feel the energy, the atmosphere was amazing. You buy your meat, you go to the Kabab shop next door, it’s like the size of a closet. They chop it in front of you, they mix it… it’s a so simple recipe. It’s meat, unions, salt… pepper?
-Yeah.
-But the simplicity and the ratios, the freshness and grabbling it immediately is what makes the difference and the hand chopped mixing, because it not only chops the meat but it mixes it with ingredients way better than any other method, so I think that’s what makes the difference. And it’s really fresh. They serve it immediately. Like, with their hand on the hot Kabab and push it off, which also is the most satisfying sound you’ve ever heard and everybody gathered around. We were eating, and as we were eating, like you don’t believe yourself, you’re eating, you’re eating, you’re eating, you don’t start to get full at all until they’re all gone, and you’re just like goint repeat that again! I could have another 4 kilos of Bonab Kababs. But anyways, that was the experience. It was one of the best Kababs in the world, and it was spectacular. They energy… again, the Bonab Kabab Energy is there!
- به یاد دارم که روز بسیار سختی را داشتیم از صبح تا غروب درگیر کار بودیم بعد مجبور شدیم یک مسافت دوساعته را در اوایل شب طی کنیم. بسیار خسته بودیم، شب قبل هم چندان فرصت خواب نداشتیم، خسته بودیم... با تنی بسیار خسته وارد بناب شدیم. در همان ابتدا چند دانشجو را دیدیم بعد هم که مردم جمع شدند یکدفعه احساس کردم یک انرژی مرا در بر گرفت و همهچیز عوض شد. خودمان رفتیم گوشت خریدیم و گوشتها را به یک رستوران کوچک بردیم، جلوی آن یک تختهای شبیه به یک گنجه بود. همهچیز ساده به نظر میرسید و سیستم بسیار سادهای داشت. محتوای غذا بسیار ساده بود، شامل نمک، گوشت و پیاز میشد. حتی چرخکردن گوشت هم به صورت دستی انجام شد. شاید مهمتر از همه تازهبودن همه مواد ازجمله گوشت، پیاز و سایر مخلفات بود که وقتی با دست چرخ میشد، با هم بسیار بهتر ترکیب میشد که شاید این راز خوشمزگی این کباب بود. نشستیم... غذا آمد... مردم هم جمع بودند. ما فقط میخوردیم... هی میخوردیم... هی میخوردیم... دوباره غذا میآمد... ما میخوردیم... هیچوقت صدای کشیدن گوشت از روی سیخ از گوشم نمیرود. جلوی چشمت گوشت را درمیآوردند و آن صدای جیلز ویلزش همیشه در گوشم هست. ما همچنان میخوردیم... شاید این بزرگترین تجربه این سفر یا شاید تمام عمرم باشد و معتقدم این کباب را هیچوقت، هیچ جای دیگر از جهان تجربه نخواهم کرد.
- اگر دوباره شما را دعوت کنم که فقط بیایید با همدیگر کباب بناب بخوریم قبول میکنید؟
- What if Mr. Taster invites you to just go to Bonab to try Banab Kabab again?
-yeah… that wherever you are in the world, it would be fun to come to Iran just to go to try the Bonab and back!
- من معتقدم که هرجای دنیا باشم اگر چنین دعوتی بشود، میارزد که به ایران بیایم، به بناب بروم، کباب را بخورم، دوباره برگردم...
- سفر بعدی که اصفهان است....
- میخواهیم به اصفهان سفر کنیم و سفری که با کافه «حاج میرزا» شروع شد. آنجا ما علاوهبر گوشکوبیده و دیزی یا آبگوشت، دوغ و گوشفیل را چشیدیم که به نظر من عجیبترین ترکیب دنیاست، ترکیب ترش و شیرین. بعد هم کشک بادمجان را خوردیم که کشک بادمجان اصفهانیها با کشک بادمجان تهرانیها فرق میکرد. روز بعد خورشت ماست و از همه مهمتر بریونی و بعد در انتها فکر میکنم با گز و... تمام شد. جاهای دیدنی زیادی را هم در اصفهان دیدیم. میخواهم بدانم مهمترین غذایی که در اصفهان خورد و خیلی خوشش آمد، چون میدانم که حتی یکی از غذاها را دوبار خورد و چند ساعت بعد به من گفت: «ای کاش یکی دیگر هم میخوردم!» میخواهم بدانم در اصفهان کدام غذا بود که بیشترین حس را به او داد؟ از هتل عباسی، هتل قدیمی و حتی هتل زندیه در شیراز برایمان بگوید که بدانیم این دو هتل را چقدر دوست داشته است؟
-In Isfahan we got started with the very old-traditional tea house, "Haj Mirza". In that we tried the meat’s Kabab, Dizy and the very strange combination of onion and a type of Iranian sweet and very strange taste, sweetness and sour together. We also tried the eggplant and carrot but it is a little different with Tehrani made eggplant and we also tried yogurt stew and also Beryoni, and we tried Isfahani sweet or known as Gaz, and also Ferni…

Mr. Taster said sometimes you tried a food twice and again you said I wanted to try it again. Did you get the same feeling in Isfahan and if you got, which one was the most favorite one that you are tiring in Isfahan. Most favorite food of Isfahan?
-The favorite. Most definitely, Beryani.

-Yeah. It’s a heavy dish and you can smell the kind man sitting in the table next to us explaining that. He is the one that says I’m not gonna wash my hands cause I want them to smell my fingers for two days. That was genius. And I’m proud to say I didn’t wash my hands. I can still smell it. But, amazing dish. Amazing process, again. Unlike anything I’ve had anywhere else; the texture the combination. It’s just the home method. Like it goes from step to step, from the limb to the meant to the mixing of the spices, it’s a grill but it’s more like bacon almost. So it sizzles in that little pan…or cup. One of the best parts is where is squashes on melted limb oil fat all over your bread. And the Lung paste. Spectacular, without the doubt that is the highlight of eating in Isfahan.
- شاید راجعبه غذای اصفهان مجبور باشم یکی را مثال بزنم، شاید بریونی اصفهان باشد که دو تا هم خوردم، ای کاش بیشتر میخوردم. خیلی فوقالعاده بود... یادم هست یک نفر در میز کناری نشسته بود و بعد از اینکه غذایش تمام شد میگفت نمیخواهم دستهایم را بشورم تا عطر این غذا چند روزی در دستهایم باشد. من هم گرچه دستهایم را شسته بودم ولی میخواستم بگویم که هنوز بوی غذا روی دستهایم باقی مانده است. واقعا تجربه بینظیری بود، پروسه غذا هم انگار در خانه تهیه میشد. خودم میدیدیم که هر قسمت را چطور تهیه میکردند، سرخ و آماده میکردند، ولی آن قسمتی را که آشپز میآمد و روغن دُمبه را روی نان میریخت و بسیار داغ و خوشمزه بود را هیچوقت نمیتوانم فراموش کنم و بعد هم میآمد بقیه مخلفات را برایت میگذاشت. تجربه بسیار بینظیر و لذتبخشی بود. من از این غذا در اصفهان بسیار لذت بردم.

-could you tell us your opinion about "Abbasi hotel" and also hotel in Isfahan?
- "Abbasi hotel" in Isfahan is one of the great hotels in the world, historical hotel. What was fantastic about it and I mean like Isfahan many things around are grand, like a mighty scale, and that you can just feel like the power in "Abbasi hotel". The courtyard, the Persian garden, the rooms, the authenticity of it and again like…
There are many modern hotels but I mean "Abbasi hotel" is both; a mix of modern comfort, yet historical authenticity and preservation, and again it is a living museum. And there are so much that adds to your experience of visiting the Isfahan. And I think you must stay in Isfahan just for the historical experience. And also the staffs are amazing. We also had a private tour to some of the off-limit rooms, comfort rooms, dining rooms… (Not audible)
- در مورد «هتل عباسی» شاید اگر شهر اصفهان را به صورت یک مجموعه تاریخی بسیار بزرگ و عظیمی فرض کنیم، همه آن اقتدار و شکوه را یکجا در «هتل عباسی» میتوانیم شاهد باشیم. میتوان گفت در جهان هتلهای مدرن بسیار زیادی داریم، ولی نکته حائز اهمیت در مورد «هتل عباسی» این است که ما راحتی و آسایش و مدرنیته را داریم در کنار اصالت و تاریخ. این ویژگی این هتل را بسیار منحصربهفرد میکند.
راجعبه کارکنان و بخشهای مختلف هتل هم که بسیار فوقالعاده و بینظیر بودند، برخورد بسیار خوبی داشتند. حتی یک تور هم در داخل هتل داشتیم که هرکسی به آنجا برود میتواند این تور را داشته باشد. بازدید از اتاقهای شاهنشین، لوکس و بسیار باکلاس که مزین به طلاکاری و سایر هنرهای ایرانی بود که بسیار بینظیر است.
- به چابهار سفر کردیم که آخرین سفر ما بود. البته بعد به تهران آمدیم. راجعبه تهران هم سوال خواهم پرسید. اینکه بههرحال در چابهار ما شکارپز را و کلهی بز – کلهپاچه بز- را و کراهی را داشتیم. درنهایت هم صبحانه بلوچی و بازار و بریانی را داشتیم. میخواهم بدانم چه چیزی در چابهار برایش از همه جالبتر بود؟ چون بههرحال به هند و پاکستان هم سفر کرده بود و تا حدودی غذاهای نزدیک به هم و حتی غذاهای خیابانی را که با همدیگر taste کردیم مثل حلیم هندی و کبابهایی که داشتند... در چابهار چه چیزی برایش جذابتر بود و کدام غذا برایش جالبتر و جدیدتر بود؟
-The last destination in from Tehran was Chabahar. In Chabahar we experienced Shekarpaz, the head of the goat, and we also tried Karahi and even we had a breakfast, we tried it in the Bazar of Chabahar also some Beryani. We know you had traveled in India and Pakistan and in Chabahar we tried Hindi Halim some different types of foods in the streets.
What is your most favorite food in Chabahar?
- Kalle pache, was just on another level. That was special food. That wasn’t an everyday food. I also loved the Halim because all those toppings, all those spices, The Head (Kalle pache) and Shekarpaz were on another level. I mean, it can hardly be compared to anything else, because it was so special and the method was so impressive and so unique. It was actually simple and the most simple form of cooking is fire and meat and hunting, cooking, just the fire that it means it had existed since thousands and thousands of years… and still nothing can top that.
What I also like is fire and meat. Fire and meat combination is all over the world. But method is different all over the world. And so a unique barbeque style, in the sand, with the date palm skewers punctured into the meat, stuck into the sand with fire coming from the both sides. They got the smoke, they got the indirect flame. And literally after 15 minutes the juice started dripping. And yet at the same time it remained juicy in the inside, and crispy, but juicy in the inside. [you] put the head inside the stomach with the intestines and the hoofs, wrap that up, stuck it into some foil into hot sand and coals on top of it, and you will hear the sound of boiling, and that amazing and delicious. And it was melting, like the whole face was melting and gelatinous and amazing. That was on side of the food, the other side of the food was that the restaurants and street [foods] that we tried. The Halim was amazing, the Kababs and the fish, the Martian mountain is unique throughout the world and impressive to see. Walking through the Bazar, I loved that experience. I think Chabahar is the spice capital of Iran. A lot more dry spices are used. Balouchi people are extremely welcoming. I would have loved to have more time there.
- در مورد غذایی که در چابهار خوردم شاید کله پاچه مورد بسیار خاصی برایم محسوب شود. فاز بسیار بالایی داشت، اصلا قابل تصور نبود و اصلا نمیتوانم آن را با هیچ چیزی مقایسه کنم، همتراز با آن شکارپز را هم هم به همین صورت. اصلا هر دوی این غذاها در یک فاز و در یک رده دیگری قرار میگیرند و قابل مقایسه با هیچ غذای دیگری نیستند. میتوانم بگویم در همه جای جهان بیس کار بدون شک آتش و گوشت است، خب درست! ولی در اینجا ما سیخهایی از برگ درخت خرما تهیه میکنیم بعد گوشت را به آن میکشیم، روی زمین قرار میدهیم، آتش را در دوطرف ایجاد میکنیم و بعد صدای سرخشدن گوشت را میتوانیم بشنویم. روی گوشت بسیار ترد میشود، درعینحالی که داخل آن پرآب و بسیار خوشمزه است.
لذا این دو غذا را - باز هم تاکید میکنم- بسیار منحصربهفرد بوده و اصلا نمیتوانم با هیچ چیز دیگری مقایسه کنم. انگار مثل شکاری است که شما شکار میکنید، بعد آتش را در آنجا درست میکنید و غذا را آماده میکنید. این خودش نشان میدهد که یک سابقه تاریخی پشت این است و به این دلیل این غذا بسیار منحصربهفرد میشود.
اما کله پاچه را -بازهم تاکید میکنم- فاز بالایی داشت، داخلش سرِ بز را قرار داده بودند و داخل یک فویل گذاشته بودند، صدای جوشکردنش را میتوانستم بشنونم و وقتی هم آن را نصفهشب نوش جان کردیم، بسیار منحصربهفرد بود. هیچوقت این را نمیتوانم فراموش کنم.
بعدازظهر هم که سراغ غذای رستورانی رفتیم، حلیم، انواع کبابها و ماهیها را خوردیم که بسیار خوشمزه بود. شاید بتوانم چابهار را به عنوان پایتخت چاشنیهای ایران معرفی کنم که از این بابت منحصربهفرد است. بخش دیگری از شهر چابهار که شامل کوههای مریخی بود بازدید کردیم که آن هم بسیار در جهان منحصربهفرد به نظر میرسد.
- در مورد تهران هم بهطور خلاصه بگویید. ما روز اول به برج میلاد رفتیم، برج آزادی را بازدید کردیم و خیلی در تهران نبودیم. روز آخر هم باملند را دیدیم و همینطور صبح هم هدیه زیبایی از طرف «رستوران بلامونیکا» دریافت کردیم و همینطور آقای رفتاری...
میخواهم بدانم در تهران چه احساسی داشت؟ خب اینجا دیزی را خورد و خیلی غذاهای تهران را مزه نکرد ولی میخواهم بدانم در مجموع با این سفر راجعبه تهران چه ذهنیتی پیدا کرد؟ البته میدانم در تهران خیلی کم بودیم یعنی نسبت به روزهایی که باید در تهران میشد شاید ما در این سفر به تهران کملطفی کردیم ولی واقعا وقت کمی داشتیم و زیباییهای شهرهایی که عنوان کردیم بسیار زیاد بود. البته شب اول به رستوران «کوهپایه» دربند رفتیم.
- As you know we had a short time to stay in Tehran. We had some opportunity to visit Milad tower and also Azadi monument and we actually experienced Koohpaye restaurant at the first night at the full of the mountain and then some of the restaurants like "Belamonika" and Mr. Raftari gave us some very nice gifts, also the boating in Bamland… Anyway we know it was quite the short time in Tehran and maybe there were not the much time to Tehran in local foods but could you tell us what is your feeling about Tehran the local foods you tried in the capital?
-I guess what’s interesting about a major city, biggest city, is that it attracts people and people come from all parts of the country, Iran to Tehran. And so you can find your favorite food. So you find food in Tehran from everywhere from around Iran. It’s the diverse first made up of many people and you experiences as you can have are like that.
I’m impressed by Tehran, the modern-ness of the city, we tried on a boat, we hiked-up a mountain, and an amazing dinner which they hosted us at "Koohpayeh". …. So many delicious food, then we went to "Bella [Monica]" restaurant where they presented us with the most precious gift that we received, the Persian carpet so thank you for everyone who is a part of that. It’s a one thing that I will cherish the whole of my life. And then on to Bamland restaurant, Mr. Rastari. And again they were so welcoming, they owner and his family. Again, the food was delicious and mix of different dishes.
- در مورد شهر تهران شاید بشود حدس زد که قاعدتا پایتخت کشور محل تجمع مردم شهرهای دیگر است و بر این اساس میشود باز هم حدس زد که قاعدتا در منوی رستورانها یک تنوع غذایی بسیار بالایی از شهرهای مختلف را در این شهر داریم. قاعدتا تنوع بالای این مردم میتواند نشاندهنده گستردگی غذاهای پایتخت هم باشد. اما در تهران من مدرنیته را بیشتر دیدم و میتوانم راجعبه این شهر بسیار عظیم و بزرگ صحبت کنم. از جاهای مختلف بازدید کردم. امروز قایقسواری رفتم که برایم جذابیت زیادی داشت. شب اول در رستوران «کوهپایه» بودم که غذاهای بسیار خوشمزهای داشت. در رستوران بلامونیکا بودم، آنجا به من هدایای بسیار ارزشمندی از جمله یک فرش بسیار زیبا داده شد. در رستوران باملند و در بخش دروازه تهران حضور پیدا کردم و غذای دیزی و کوفته تبریزی را خوردم که تجربه بسیار خوبی بود. ضمن اینکه آقای رفتاری، مدیریت محترم رستوران بودند که آمدند و به ما خوشامد گفتند و برخورد بسیار خوبی داشت و روز بسیار خوبی را برایمان رقم زد.
- در مورد تاریخچه تبریز و بازاری را که دیدیم و بناهای تاریخی مثل تاریخچه مسجدی که رفتیم کمی برایمان توضیح دهید که در مورد اماکن تاریخی تبریز چه حسی داشتید؟
-Would you tell us your opinion about the history sites of the city, Tabriz, you have visited the grand bazaar of Tabriz one of the sections on the name of Safavid Timche, also the Friday mosque of Tabriz.
Please let us what was there and what is your opinion about the historical background of the city?
-The history in Tabriz the grand bazaar was a highlight [to me], because it’s a living museum. You can just feel that it’s the since from hundreds of years. And it is so authentic. Because it’s not catering to souvenirs, it’s not catering to visitors, it’s for the people. And so it’s a living museum that’s completely authentic that people go there on a regular basis to buy supplies, to buy anything available. And its preservation, it’s an amazing place; it’s like stepping back in time. I love just walking around and the grand bazaar; it was a highlight to me.
- در مورد تاریخ شهر تبریز و بازار قدیم که ما فرصت پیدا کردیم در آن قدم بزنیم و بازدید کنیم، میتوانیم بگوییم این یک موزه [زنده] بسیار بزرگی است و از قرون بسیار گذشته و دارای بازدیدکنندگان فراوان است و مردم زنده شهر جهت خریدوفروش و تهیه مایحتاج به اینجا سر میزنند و حضور پیدا میکنند. لذا برای من شبیه یک تونل زمانی است که من علاوهبر اینکه در قرون مختلف سیر میکنم، میتوانم مردمِ زمان حال جامعه را ببینم و از این بازدیدم لذت ببرم.
خب به شیراز سفر کنیم. شهری که توانستیم جاهای تاریخی زیادی از این شهر را ببینیم مانند مسجد نصیرالملوک...
- چه شد که اصلا دعوت ما را قبول کردید؟ دیدار ما به بانکوک برمیگردد زمانی که من سفر را طولانیتر کردم که فقط مارک را ببینم. آیا آن سفر در قبول دعوت من به ایران تاثیری داشت؟ یا خودش دوست داشت به ایران بیاید؟ چون خیلیها سوال میکردند که چرا به ایران نمیآید؟ با اینکه یک سری شبکهها برنامههایش را نشان میدادند. جریان چه بود که به ایران نمیآید و میخواهم بدانم چه چیزی از همه مهمتر بود که باعث شد دعوت ما را قبول کند؟
-Mr. Taster is travel to Bangkok and even he had to extend the visa to visit and invite you to Iran to make report and take your videos and then in that time there were lots of people asking him why Mark never ever travelled to Iran to make some videos about Iranian’s food but Why he didn’t get any decision to travel to Iran? And then finally you decided to travel to Iran. Was there any reason maybe you met each other in Bangkok and you decided com to Iran or no you made your own decision?
-What was the most important reason you travel to Iran?
- Actually, years ago I started to get messages from people from Iran all over the social media, emails, lots of Instagram; come to Iran, welcome to Iran, when are you gonna come to Iran, every day, for years. And then I had the honor to meet Mr. Taster when he came to Bangkok almost two years ago. And so, he is the one who was able to facilitate it, to make it happen and organize it. From long ago I wanted to visit… I mean, I’ve known Persian culture is ancient, the food. I didn’t have much experience with the food before coming to Iran, so it was a huge learning experience for me by coming here. But I knew the ancient culture; I knew about the Kababs, I had tried a few dishes at restaurants, like in L.A or other places, but not very much. And so I was curious and very eager to come to Iran for years. And so when we finally got everything in together, it was a huge honor to have a chance to visit Iran. And again thank you to everyone; Mr. Taster, Hamid and Pegah, Alijan and tour organizations, Qasr-e-Setareh and everyone who came together to… All the different pieces coming together to make it happen, without all of them it wouldn’t have been possible. Yeah, I wanted to visit Iran for a long time. And I’m so happy to say that. We had a privilege to visit.
- شاید بهتر است بگویم از سالها قبل پیامهای بسیار زیادی را از طریق رسانههای جمعی ایران، ایمیلها، تلگرام، اینستاگرام و از کسانی که از طرق مختلف سعی کردند این پیام را به من بدهند که باید بیایم از ایران بازدید کنم و ویدئو تهیه کنم، دریافت میکردم. هیچوقت این ذهنیت را نداشتم که باید به ایران مسافرت کنم تا این اتفاق افتاد و مفتخر به ملاقات با مستر تیستر در بانکوک شدم و متوجه شدم که باید این سفر را بروم. میدانستم که فرهنگ ایران بسیار باستانی است و چنین فرهنگی لابد غذاهای بسیار متنوع و فوقالعادهای را در خود دارد.
من قبل از این، از رستورانهای ایرانی مختلفی از جمله در لسآنجلس بازدید کرده بودم و غذاهایش را خورده بودم و این باعث شد حس کنجکاویام بیشتر تحریک شود و بیشتر مترصد به سفر به ایران شوم و درنهایت از طریق ملاقات با حمید و دیدنش مترصد شدم و تصمیم گرفتم این سفر را انجام دهم. خیلی خوشحالم که این سفر انجام شد. همیشه دلم میخواست بیایم و خیلی خوشحالم که آمدم و این سفر صورت گرفت و من توانستم این تجربه را در اینجا رقم بزنم.
- اگر بخواهید فقط یک غذا و یک محصول مانند خاویار، گز یا زعفران و یک صنایع دستیای که امضای ایران باشد را نام ببرید چه چیزهایی را میگویید؟
-you were tried different things in Iran and it’s the possible to tell us which food can be the signature of Iranian foods in your mind and second you have tried some product like caviar and some dessert like Gaz or Nogha in Isfahan and saffron so what would be your choice or taste of products. And finally you have seen lot of different handicrafts so if it would be possible to select one of the handicraft as a signature for a country, [what would you choose…]
Let’s start a food…
- Kababs. Kabab is amazing and one of the best things in the world and Iran has the best Kabab in the world but I think is that Kababs are so well known. So for me even maybe more especial stews of Iran. The Gormesabzy is an amazing dish.
-You forgot that in the Shiraz…
-and Fesenjoon… Some of the stews are unbelievably good. There are also dishes that could get a lot of attention I think. But some of the dishes like Ghormesabzy are so unique and well-known to Iran. In terms of single products, nothing can beat the caviar.
Saffron is also the best in Iran. And when you think about it so many things are flavor in saffron. It’s so important for the quizine of Iran.
For the handicraft I think nothing represents the history, the hospitality and the people more than [Persian] carpets, without a doubt.
- شاید بتوانم کبابهای بسیار خوشمزه ایران را به همه پیشنهاد کنم. همهی کبابهای ایران فوقالعاده هستند. بدون شک بهترین کبابها را میتوانید در کشور ایران تست و مزه کنید و این را همه میدانند و من هم شکی در مورد کبابهای ایران ندارم. راجعبه خورشتها میتوانم قورمهسبزی را بگویم که خورشت منحصربهفرد ایران است و این را میتوانم به همه پیشنهاد کنم. اما از فسنجون و همه خورشتهایی که در شمال کشور هم خوردیم باید صحبت کنم آنها هم منحصربهفرد بودند.
خاویار را به عنوان یکی از محصولات بسیار منحصربهفرد کشور میتوانم معرفی کنم. طعم و مزه خیلی خارقالعادهای دارد و بسیار فوقالعاده است. زعفران هم از جمله مواد غذایی بسیار مهم و بسیار شایع برای تهیه همه غذاهای ایرانی است را باید نام ببرم. اما هیچ چیزی در صنایع دستی کشور به اندازه فرش نمیتواند تاریخ، مردم و فرهنگ ایران را منعکس کند.
-and also olives with walnut and pomegranate paste that’s unique and incredible.
- و همچنین فراموش کردم این نکته را در مورد زیتون پرورده بگویم، ترکیبی از مغز گردوی ایرانی؛ زیتون و رب انار که بسیار لذیذ و خوشمزه است.
- در مورد میوه چطور؟ البته فکر میکنم انار باشد.
-what about fruit?

- انار را هم به عنوان بهترین میوه ایران مزه کردند و میتوانند پیشنهاد کنند.
- اگر بخواهد از بهترین خاطرهای که در اینجا دارد یاد کند چه خواهد بود؟
-What is the best moment you made in Iran and you will remember it in your all life?
-everything… but I think having all of the experiences and getting back to Tehran and presentation of the Persian carpets. This is the most special, heartwarming but also memorable scene and also the emotions and everybody.
-Maybe one million K…
-yes and the [boo?] Tick party… yes, never forgot the Chabahar surprise; one million Instagram party. That was totally unexpected and I was shocked and scared. But yeah, that was an incredible surprise and that was an amazing celebration… it was amazing…
- برایم واقعا سخت است که بتوانم انگشت بگذارم و یک لحظه را به عنوان بهترین خاطره خوش برای شما بگویم، ولی میتوانم همه را یکجا بگویم که کل این سفر برایم خاطره است و لحظه لحظهاش برایم خاطره است و هیچوقت نمیتوانم فراموش کنم. از شهرهای مختلف بازدید کردم و بعد وقتی به تهران برگشتیم و آن لحظهای که آن فرش بسیار نفیس را جلوی چشمهایم دیدم که به عنوان هدیه به من داده شد و توضیحات مربوط به آن را میشنیدم، یکدفعه یک تاثیر بسیار خاصی را در ذهنم گذاشت که هیچوقت نمیتوانم فراموش کنم، اما شاید جشن یک میلیون نفری، تیکی که در مورد ایران آورده شد و در لابی بومگردی دور بلوچ سوپرایز شدم را شاید هیچوقت فراموش نکنم یا بهتر است بگویم ترسیدم و جیغی که مستر تیستر کشید...
- دوباره کِی برمیگردید؟
-we are waiting for you for the second trip to Iran. When will happen in the future?

- و در آخر میخواهم از ایشان تشکر کنم که [به اینجا] آمد. فقط یک نکته را بپرسم. اگر بخواهد برای برندینگِ بیشتر غذاهای ایرانی به ما پیشنهاد کند و ما را نصیحت کند چون تابحال اتفاق خاصی در غذاهای ما نیفتاده است با اینکه تنوع غذای ایرانی در دنیا تک است چه کار باید کنیم؟ اگر خودش جای یک ایرانی بود برای برندینگ غذای کشورش چه کار میکرد؟
-The question, supposing that you are Iranian person. So what would you do to make the Iranian’s food that has such a great variety, but what would you do to make it as a brand in the world.
We need your suggestions to make the Iranian food very popular with the whole world.
-I think again it’s about focusing on the best of the ingredients that make up Iranian quizine, and also unique products, and unique combinations, like the unique dishes. For instance the olives, walnuts and pomegranate paste. I never tasted anything like that. My first bite, again just blew me away with contrast of flavors. People taste that in first bite, and like something like that. You immediately be interested in more. And I think on top of that, it’s about, again, the hospitality and the more of the people, people put in love with the food. And so that stands out. That can be what really interests more and more people throughout the world to try more more Iranian food. It’s that combination of amazing contrast of flavors in one bite. I guess people interested in warm draw of people and hospitality; I think that what is really powerful.
- شاید بتوانم بگویم که تاکید بر محتوای غذاها و پیداکردن ترکیبات بسیار خاص و منحصربهفرد و بعد درآوردن یک ترکیب نهایی که بتواند آن طعم و آن مزه خاص غذای ایرانی را با کیفیت بسیار عالی معرفی کند و بعد ترکیبکردن همه اینها با چاشنیها و مواد مختلف باکیفیت باعث میشود که مردم بخواهند بیایند و از غذای ایران بیشتر استفاده و میل کنند، ولی شاید مورد اصلیتر که باعث انگیزهدادن به توریستها برای آمدن به ایران برای استفاده از غذای ایرانی شود، روی خوش و خوشامدگویی به توریستها است که همه را بدون شک تهییج میکند تا وارد ایران شوند و بیایند از غذای ایرانی استفاده کنند.
- آیا معتقدید که غذا زبان صلح است؟
-Do you believe in that peace expression that food is the language of peace?
-yeah for sure…
- بدون شک همینطور است و غذا واقعا زبان صلح است.
-food can like bring down walls and connect people from everywhere in the world, I believe.
- من معتقدم که غذا میتواند باعث جلوگیری از وقوع جنگها (فروریختن دیوارها بشود) و مردم را دور هم جمع کند تا بنشینند و با همدیگر غذا بخورند و به دوستی و صلح برسند.

- و خیلی ممنون از آقای فیضی، آقای لاریجانی و آقای دکتر تیموری در وزارت گردشگری و... از همه تشکر میکنم. واقعا این یک کار تیمی بسیار قشنگی بود... ما به هیچ عنوان نه سیاسی هستیم و نه... بیشتر یک آدم اقتصادیِ کارآفرین و شاید علاقهمند به کشور هستیم. برای خیلیها شاید این سوال شده بود که آیا حمید سپیدنام با جایی برنامه سفر(itinerary) برای خودش تعریف کرده؟! خیر به این صورت نبوده ولی بههرحال این یکTeam Work زیبا بود و با همه کسانی که اسم بردم شاید اسم خیلیهای دیگر را نبردم. از خودِ مردمی که میآمدند و این حس خوب را به ما و به خانوادهاش میدادند و از همه ممنونم. دست همه را میبوسم. و درنهایت we all gonna miss you and let’s have the last Koubideh.
